Today my sweet tooth was bigger than ever, if you can believe that! So take a good look at this picture and just imagine what you could taste in under an hour. Brownies are one of my favorite desserts to make because of how scrumptious they are and how creative you can be with them. Whether it is the chocolate, the nuts, or the caramel you can just change up every recipe so it is so unique. This one is inspired by the Canadian Living cookbook and I have added a few of my own tasty surprises. Now it is time to follow me through this step by step process so you can have some of your own brownies!

Makes 16 medium sized pieces or 9 large

Ingredients:

1                      Rolo bar

4 oz                Semi-sweet chocolate chips

2 oz                Dark Chocolate (I used 60% Peru chocolate from Trader Joe’s)

½ cup           Unsalted Butter at room temperature

1 cup              Granulated sugar

1 tsp               Pure vanilla extract

2                      Large eggs at room temperature

¾ cup           All-purpose flour

½ cup           Chopped walnuts or pecans

¼ tsp             Baking powder

Pinch             Salt

Method:

  • Preheat the oven to 350 degrees F and line a 9 by 9 metal or glass pan with parchment paper. Set Aside.
  • Cut the Rolo bar pieces into quarters and set aside.
  • Heat up the semi-sweet chocolate, the dark chocolate and the butter in a saucepan over the stove or in a bowl in a microwave. If using the microwave make sure to not over heat. Put it in the microwave for 30 second intervals, mixing in between each one. Heat up until the mixture is half melted and whisk the rest until all is smooth. Whisk in sugar and vanilla until incorporated. Whisk in eggs one at a time until the mixture is shiny.
  • In another bowl whisk together the flour, half of the nuts, baking powder, and the salt. Mix into the chocolate mixture in two additions just until combined.
  • Scrape the mixture into the prepared pan and drizzle the rest of the nuts over top. Distribute the Rolo pieces evenly on the top as well.
  • Bake in the oven for 35 minutes or until a tooth pick comes out clean. Let cool in pan for 10 minutes and then lift up the corners of the parchment paper and cut the brownies into squares. Enjoy!
