Single or double? 

So after doing some baking last night I found a little tip that you may want to know. What is the difference between single and double acting baking powder? I found a little Rumford in the cabinet last night and asked myself, “what does double acting mean anyway?”

  • Double Acting Baking Powder: Unlike single acting baking powder, double acting not only leavens during the mixing process between wet and dry ingredients, but it also leavens during the increase in temperature in the oven.
  • Double Acting Baking Powder is the most commonly sold baking powder in the grocery stores.
  • When mixing your dry ingredients with the wet, it is best to stir only until the mixture is moist because it will release the least amount of gas from the recipe. This will enable most reaction to occur and to give you baked goods with more body.
