Today’s blog is fully inspired by my friend Chelsey who is visiting my wife and I in Calgary this week from sunny California. She wrote a guest post to go with her rainy day inspired cookies to boot! Read on if you want to find out more about what one of my biggest fans has to say about my kitchen…
“My mom always told me when I was growing up that rainy days are for making cookies. So now that I find myself in Calgary on rainy upon rainy afternoon, I thought to myself, “why not bake some cookies?!” The Male Baker has all the key baking tools to get the job done which made baking easy and fun! I decided to go for oatmeal chocolate chip medley skor cookies because who doesn’t like all the flavours of butterscotch, milk chocolate, white chocolate, and skor all together in one bite? Plus, the oatmeal gives you all the fiber you need, so it makes you think you are being healthy.” ~Chelsey
Makes 24 Oatmeal Chocolate Chip Medley Skor Cookies
Ingredients:
½ cup + 1tbsp Butter, softened
¾ cup White sugar
1 Large egg
1 tbsp Milk
2 tsp Pure vanilla extract
1 cup All purpose flour
½ tsp Baking powder
Pinch Salt
2 tsp Cinnamon
1 ½ cups Oats (regular or quick oats)
½ cup Milk chocolate chips
½ cup Butterscotch chips
½ cup Skor bits
½ cup White chocolate chips
Method:
- Preheat the oven to 375F and line 2 baking sheets with parchment paper. Set aside.
- In a large bowl or a mixer, beat together the butter, sugar, egg, milk, and vanilla.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients and mix together until incorporated and no flour remains.
- Add the oats, chocolate chips, and skor bits slowly while the mixer is on low speed.
- Drop on prepared cookies sheets with desired size and bake for 10 minutes or until the tops begin to brown.
- Let cool on the pan for 5 minutes then transfer to a cooling rack.
- Now take a few Oatmeal Chocolate Chip Medley Skor Cookies and munch them down like you mean it! Enjoy!
